Avocado and shrimp verrines

4,6/5 (996 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 20 min
  • Serves 6
  • Very easy

Ingredients

Number of people: Serves 6

  • 2 avocados
  • 150 g pink shrimp
  • 1 lime
  • 2 tbsp crème fraîche
  • Chives
  • Salt, pepper
  • A few lettuce leaves

Preparation stepsTotal time: 20 min

  1. Mash5 min

Mash the avocados with the lime juice, cream, salt and pepper. Blend in short pulses, scraping down the sides. Taste, adjust the salt and pepper, and thin with a little liquid if it is too thick. Amounts for this step: 2 avocados; 1 lime.

  2. Layer5 min

Spoon the avocado cream into the glasses. It is whipped enough when the whisk leaves a soft peak. Then fold in by lifting the mixture from the bottom up, so you keep the air in.

  3. Top5 min

Add the shrimp and a few chives. Count the time from when you start, and only move on once you get the result described. Amounts for this step: 150 g pink shrimp; Chives.

  4. Serve5 min

Keep chilled until it's time to eat. Press plastic wrap onto the surface to stop a skin forming, and chill it away from the back wall of the fridge. This rest is part of the total time.
