4,8/5 (348 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 1 hr 15
  • Serves 6
  • Easy

Ingredients

Number of people: Serves 6

  • 1 kg potatoes
  • 40 cl cream
  • 30 cl milk
  • 1 cloves of garlic
  • Nutmeg
  • 40 g butter
  • Salt, pepper

Preparation stepsTotal time: 1 hr 15

  1. Slice5 min

Peel the potatoes and cut them into thin rounds. Don't rinse them. Weigh everything first, then cut pieces of the same size so they cook evenly. Keep the trimmings aside until the end, in case you need to adjust. Amount for this step: 1.2 kg potatoes.

  2. Rub5 min

Rub a gratin dish with the garlic and butter it. Count the time from when you start, and only move on once you get the result described.

  3. Assemble5 min

Layer the slices, season with salt and pepper, and add the nutmeg, milk and cream. Count the time from when you start, and only move on once you get the result described. Amount for this step: Nutmeg.

  4. Bake1 hr

1 hour at 160°C, until golden on top and tender in the middle. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up.

Tips and variations

  • A true dauphinois has no cheese, but kids love a handful of Comté.
  • Let rest for 10 minutes before serving.
  • It reheats very well.
