Fish en papillote

4,5/5 (315 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 30 min
  • Serves 4
  • Very easy

Ingredients

Number of people: Serves 4

  • 4 white fish fillets
  • 1 zucchini
  • 1 carrots
  • 1 lemons
  • Olive oil
  • Dill
  • Salt, pepper

Preparation stepsTotal time: 30 min

  1. Cut5 min

Cut the zucchini and carrot into thin sticks. Weigh everything first, then cut pieces of the same size so they cook evenly. Keep the trimmings aside until the end, in case you need to adjust. Amounts for this step: 1 zucchini; 1 carrot.

  2. Assemble5 min

In the center of each sheet, place the vegetables, then the fish, lemon and dill. It is whipped enough when the whisk leaves a soft peak. Then fold in by lifting the mixture from the bottom up, so you keep the air in. Amounts for this step: 4 white fish fillets; 1 lemon; Dill.

  3. Close5 min

Drizzle with oil, salt, and fold the parcel shut like a turnover. Count the time from when you start, and only move on once you get the result described.

  4. Bake15 min

15 minutes at 200°C. Open at the table. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up.

Tips and variations

  • Salmon works too; 12 minutes is enough.
  • Add a knob of butter.
  • Open carefully: the steam is very hot.
