Red berry yule log

4.7/5 (897 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 1 hr 20
  • Serves 8
  • Intermediate

Ingredients

Number of people: Serves 8

  • 4 eggs
  • 100 g sugar
  • 100 g flour
  • 250 g red berries
  • 20 cl cream
  • 2 tbsp powdered sugar

Preparation stepsTotal time: 1 hr 20

  1. Sponge10 min

The same sponge as for a classic yule log, 10 minutes at 180°C. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up.

  2. Cream5 min

Whip the cream with the powdered sugar and half the berries, crushed. Add the delicate ingredients off the heat, a little at a time, lifting the mixture from the bottom up so it does not collapse. Amounts for this step: 250 g red berries; 2 tbsp powdered sugar.

  3. Roll1 hr

Spread, roll up and chill for 1 hour. Press plastic wrap onto the surface to stop a skin forming, and chill it away from the back wall of the fridge. This rest is part of the total time.

  4. Decorate5 min

Fresh berries on top. Plate at the last minute. Taste for salt, pepper and acidity, then serve right away: a hot dish is served hot, a cold dish is served cold. Amount for this step: 250 g red berries.

Tips and variations

  • Frozen raspberries work in the cream.
  • Serve well chilled.
  • A little lemon zest brightens the berries.
