Roast turkey with chestnuts

4,5/5 (1060 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 2 hr 45
  • Serves 8
  • Intermediate

Ingredients

Number of people: Serves 8

  • 1 turkey (3 kg)
  • 400 g cooked chestnuts
  • 2 onions
  • 80 g butter
  • Thyme, bay leaf
  • Salt, pepper
  • 1 glass of water

Preparation stepsTotal time: 2 hr 45

  1. Prepare1 hr

Take the turkey out of the fridge an hour ahead. Season with salt and pepper and tuck thyme and onions into the cavity. Take out ahead of time anything that needs to lose its chill, get the dish and utensils ready, and only add salt when the recipe says so. Amounts for this step: 1 turkey (3 kg); 2 onions.

  2. Start roasting45 min

Brush with butter. Roast for 45 minutes at 180°C. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up.

  3. Baste40 min

Baste often. Add the chestnuts around it for the last 40 minutes. Count the time from when you start, and only move on once you get the result described. Amount for this step: 400 g cooked chestnuts.

  4. Rest20 min

Let rest for 20 minutes under foil before carving. Tent loosely with foil and leave at room temperature. The juices settle back into the meat and it carves more easily.

Tips and variations

  • Allow about 40 minutes per kilo.
  • The roasting juices make an easy gravy.
  • Jarred chestnuts, well drained, work fine.
