4,6/5 (1221 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 55 min
  • Serves 4
  • Easy

Ingredients

Number of people: Serves 4

  • 1 butternut squash
  • 2 carrots
  • 1 onion
  • 1 can of chickpeas
  • 1 tsp cumin
  • 1 tsp paprika
  • 40 cl stock

Preparation stepsTotal time: 55 min

  1. Sauté8 min

Brown the onion, then add the spices. Heat the fat over medium heat without letting it smoke. Stir so everything colors evenly: golden, never black, or it turns bitter. Amount for this step: 1 onion.

  2. Vegetables7 min

Add the squash and carrots, cut into cubes. Weigh everything first, then cut pieces of the same size so they cook evenly. Keep the trimmings aside until the end, in case you need to adjust. Amounts for this step: 1 butternut squash; 2 carrots.

  3. Simmer30 min

Pour in the stock and cook for 30 minutes, covered. The liquid should simmer, not boil. Stay close for the first few minutes to set the heat, then check that nothing sticks to the bottom. Amount for this step: 40 cl stock.

  4. Finish10 min

Add the chickpeas for 10 minutes and adjust the salt. Plate at the last minute. Taste for salt, pepper and acidity, then serve right away: a hot dish is served hot, a cold dish is served cold. Amount for this step: 1 can of chickpeas.
