Profiteroles

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 50 min
  • Serves 6
  • Intermediate

Ingredients

Number of people: Serves 6

  • 15 cl water
  • 60 g butter
  • 90 g flour
  • 2 eggs
  • 20 cl cream
  • 100 g chocolate
  • 1 pinch of salt

Preparation stepsTotal time: 50 min

  1. Choux pastry9 min

In a mixing bowl, combine water, butter and salt brought to a boil, the flour, then the eggs off the heat. Stir from the center outward until smooth, with no dry pockets at the bottom. Stay off the heat: the residual warmth is enough. Putting the pan back on the heat at this point can split the cream, seize the chocolate or scramble the eggs.

  2. Bake25 min

Small puffs, 25 minutes at 180°C. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up.

  3. Fill8 min

Lightly sweetened whipped cream inside. Count the time from when you start, and only move on once you get the result described.

  4. Coat8 min

Chocolate melted with a little cream, poured over the puffs. Plate at the last minute. Taste for salt, pepper and acidity, then serve right away: a hot dish is served hot, a cold dish is served cold. Amount for this step: 100 g chocolate.
