Leg of lamb with gentle spices

4,8/5 (1.318 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 1 hr 50
  • Serves 6
  • Intermediate

Ingredients

Number of people: Serves 6

  • 1 leg of lamb
  • 2 cloves of garlic
  • 1 tsp cumin
  • 1 tsp coriander
  • 2 tbsp oil
  • Salt, pepper

Preparation stepsTotal time: 1 hr 50

  1. Rub5 min

Mix the oil and spices, rub the lamb with it and stud it with garlic. Count the time from when you start, and only move on once you get the result described. Amount for this step: 1 leg of lamb.

  2. Rest30 min

Leave for 30 minutes at room temperature. Let it rest, covered, for the time given, without putting it back on the heat.

  3. Roast1 hr

20 minutes at 220°C, then 40 minutes at 170°C. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up.

  4. Rest15 min

15 minutes under foil before slicing. Tent loosely with foil and leave at room temperature. The juices settle back into the meat and it carves more easily.
