Panna cotta with berries

4,9/5 (379 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 4 hr 15
  • Serves 4
  • Very easy

Ingredients

Number of people: Serves 4

  • 40 cl cream
  • 40 g sugar
  • 1 vanilla beans
  • 2 gelatin sheets
  • 200 g red berries

Preparation stepsTotal time: 4 hr 15

  1. Heat5 min

Cream, sugar and vanilla until just simmering. The liquid should simmer, not boil. Stay close for the first few minutes to set the heat, then check that nothing sticks to the bottom. Amount for this step: 1 vanilla bean.

  2. Gelatin5 min

Off the heat, add the softened gelatin. Stay off the heat: the residual warmth is enough. Putting the pan back on the heat at this point can split the cream, seize the chocolate or scramble the eggs. Amount for this step: 2 gelatin sheets.

  3. Set4 hr

Pour into glasses and chill for 4 hours. Press plastic wrap onto the surface to stop a skin forming, and chill it away from the back wall of the fridge. This rest is part of the total time.

  4. Serve5 min

Red berries on top, no need to turn them out. Plate at the last minute. Taste for salt, pepper and acidity, then serve right away: a hot dish is served hot, a cold dish is served cold. Amount for this step: 200 g red berries.
