Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 45 min
  • Serves 6
  • Very easy

Ingredients

Number of people: Serves 6

  • 120 g short-grain rice
  • 1 l milk
  • 60 g sugar
  • 1 cinnamon sticks
  • 1 vanilla beans

Preparation stepsTotal time: 45 min

  1. Start5 min

Rinse the rice. Bring the milk to a simmer with the sugar, cinnamon and vanilla. The liquid should simmer, not boil. Stay close for the first few minutes to set the heat, then check that nothing sticks to the bottom. Amounts for this step: 1 cinnamon stick; 1 vanilla bean.

  2. Cook30 min

Add the rice and stir often for 30 minutes over low heat. The liquid should simmer, not boil. Stay close for the first few minutes to set the heat, then check that nothing sticks to the bottom.

  3. Thicken5 min

The rice should be tender and the cream thick enough to coat. Count the time from when you start, and only move on once you get the result described.

  4. Serve5 min

Warm or cold, with a little cinnamon on top. Plate at the last minute. Taste for salt, pepper and acidity, then serve right away: a hot dish is served hot, a cold dish is served cold. Amount for this step: 1 cinnamon stick.
