Guinea fowl with apples

४.५/5 (४४५ reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 1 hr 20
  • Serves 4
  • Intermediate

Ingredients

Number of people: Serves 4

  • १ guinea fowl
  • ३ apples
  • १ onion
  • ४० g butter
  • १५ cl stock
  • Thyme
  • Salt, pepper

Preparation stepsTotal time: 1 hr 20

  1. Brown10 min

Brown the guinea fowl in butter on all sides. Heat the fat over medium heat without letting it smoke. Stir so everything colors evenly: golden, never black, or it turns bitter. Amount for this step: 1 guinea fowl.

  2. Apples10 min

Add the onion and the apples cut into quarters. Count the time from when you start, and only move on once you get the result described. Amounts for this step: 3 apples; 1 onion.

  3. Roast50 min

50 minutes at 180°C, basting, with the stock in the dish. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up. Amount for this step: 15 cl stock.

  4. Serve10 min

Carve and surround with the meltingly soft apples. Weigh everything first, then cut pieces of the same size so they cook evenly. Keep the trimmings aside until the end, in case you need to adjust. Amount for this step: 3 apples.
