Duck breast with orange

4,9/5 (639 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 35 min
  • Serves 4
  • Intermediate

Ingredients

Number of people: Serves 4

  • 2 duck breasts
  • 2 oranges
  • 1 shallot
  • 1 tbsp honey
  • 15 cl stock
  • Salt, pepper

Preparation stepsTotal time: 35 min

  1. Score8 min

Score the skin of the duck breasts in a crisscross pattern. Salt them. Count the time from when you start, and only move on once you get the result described. Amount for this step: 2 duck breasts.

  2. Cook12 min

Cook skin side down for 8 minutes, then 4 minutes on the other side. Set aside. Get the pan nice and hot, but not smoking. Sear until well browned, then lower the heat if it starts to blacken.

  3. Sauce8 min

Sweat the shallot in a little of the fat, then add the orange juice, honey and stock. Set the heat so it simmers or browns without smoking. Stir the bottom once at the start so nothing sticks. Amounts for this step: 1 shallot; 15 cl stock.

  4. Coat7 min

Slice the duck and spoon over the sauce. Plate at the last minute. Taste for salt, pepper and acidity, then serve right away: a hot dish is served hot, a cold dish is served cold.
