Separate the eggs. Beat the yolks and sugar, add the mascarpone, then the whisked whites. Add the delicate ingredients off the heat, a little at a time, lifting the mixture from the bottom up so it does not collapse. Amount for this step: 250 g mascarpone.
Dip them quickly in the orange juice. Count the time from when you start, and only move on once you get the result described. Amount for this step: 15 cl orange juice.
Alternate ladyfingers and cream in a dish. It is whipped enough when the whisk leaves a soft peak. Then fold in by lifting the mixture from the bottom up, so you keep the air in. Amount for this step: 200 g ladyfingers.
4 hours in the fridge. Cocoa just before serving. Press plastic wrap onto the surface to stop a skin forming, and chill it away from the back wall of the fridge. This rest is part of the total time. Amount for this step: Cocoa.
