   Rub in5 min

   

   In a mixing bowl, combine the butter, flour and sugars. Stir from the center outward until smooth, with no dry pockets at the bottom. Dust the work surface lightly with flour. If the dough sticks, ten minutes in the fridge firms it up better than extra flour.

2. 2

   Bind30 min

   

   The egg, then 30 minutes in the fridge. Press plastic wrap onto the surface to stop a skin forming, and chill it away from the back wall of the fridge. This rest is part of the total time.

3. 3

   Animals5 min

   

   Cookie cutters, 4 mm. Count the time from when you start, and only move on once you get the result described.

4. 4

   Bake12 min

   

   12 minutes at 170°C. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up.
