Chocolate mousse

4,8/5 (1.188 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 3 hr 15
  • Serves 6
  • Very easy

Ingredients

Number of people: Serves 6

  • 150 g dark chocolate
  • 4 eggs
  • 1 pinch of salt
  • 1 tbsp sugar

Preparation stepsTotal time: 3 hr 15

  1. Melt5 min

Melt the chocolate in a water bath. Melt the chocolate over low heat, without a single drop of water. If it thickens and turns grainy, it got too hot and you need to start again. Amount for this step: 150 g dark chocolate.

  2. Yolks5 min

Add the yolks one at a time, off the heat. Stay off the heat: the residual warmth is enough. Putting the pan back on the heat at this point can split the cream, seize the chocolate or scramble the eggs.

  3. Whites5 min

Whisk the whites with the salt and sugar. It is whipped enough when the whisk leaves a soft peak. Then fold in by lifting the mixture from the bottom up, so you keep the air in.

  4. Fold3 hr

Fold together gently and chill for 3 hours. Press plastic wrap onto the surface to stop a skin forming, and chill it away from the back wall of the fridge. This rest is part of the total time.

Tips and variations

  • No cream: a classic mousse doesn't have any.
  • Serve in verrines.
  • A little orange zest in the chocolate.
