Mrs. Claus's recipe, to make as a family in the Village kitchen.
Number of people: Serves 4
Cut the parsnip and pear into pieces and slice the onion. Weigh everything first, then cut pieces of the same size so they cook evenly. Keep the trimmings aside until the end, in case you need to adjust. Amounts for this step: 500 g parsnips; 1 pear; 1 onion.
Sweat them for 5 minutes in the butter. Heat the fat over medium heat without letting it smoke. Stir so everything colors evenly: golden, never black, or it turns bitter.
Cover with stock and cook for 20 minutes. Set the heat so it simmers or browns without smoking. Stir the bottom once at the start so nothing sticks. Amount for this step: 75 cl stock.
Blend with the cream, then season with salt and pepper. Blend in short pulses, scraping down the sides. Taste, adjust the salt and pepper, and thin with a little liquid if it is too thick.
