Jam shortbread

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 52 min
  • Serves 6
  • Easy

Ingredients

Number of people: Serves 6

  • 250 g flour
  • 125 g butter
  • 80 g sugar
  • 1 eggs
  • 1 pinches of salt
  • Red berry jam

Preparation stepsTotal time: 52 min

  1. Rub in5 min

In a mixing bowl, combine the flour, sugar, salt and butter, with your fingertips. Stir from the center outward until smooth, with no dry pockets at the bottom. Dust the work surface lightly with flour. If the dough sticks, ten minutes in the fridge firms it up better than extra flour.

  2. Bind30 min

Add the egg, shape into a ball and chill for 30 minutes. Press plastic wrap onto the surface to stop a skin forming, and chill it away from the back wall of the fridge. This rest is part of the total time.

  3. Cut out5 min

Two layers: one whole, the other with a hole in the middle. Weigh everything first, then cut pieces of the same size so they cook evenly. Keep the trimmings aside until the end, in case you need to adjust.

  4. Bake12 min

12 minutes at 170°C. Jam between the two once cool. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up. Amount for this step: Red berry jam.
