French onion soup

4.7/5 (317 reviews)

Mrs. Claus's recipe, to make as a family in the Village kitchen.

  • Total time: 55 min
  • Serves 4
  • Easy

Ingredients

Number of people: Serves 4

  • 6 yellow onions
  • 40 g butter
  • 1 l chicken stock
  • 4 slices of bread
  • 80 g grated Gruyère
  • 1 tbsp flour
  • Salt, pepper, thyme

Preparation stepsTotal time: 55 min

  1. Slice10 min

Cut the onions into thin slices. Weigh everything first, then cut pieces of the same size so they cook evenly. Keep the trimmings aside until the end, in case you need to adjust. Amount for this step: 6 yellow onions.

  2. Caramelize20 min

Cook them gently in the butter for 20 minutes until golden. Heat the fat over medium heat without letting it smoke. Stir so everything colors evenly: golden, never black, or it turns bitter.

  3. Add the stock20 min

Sprinkle with flour, pour in the stock and simmer for 20 minutes with the thyme. Set the heat so it simmers or browns without smoking. Stir the bottom once at the start so nothing sticks. Amount for this step: 1 l chicken stock.

  4. Gratinate5 min

Ladle into bowls, top with the bread and cheese, and broil for 5 minutes. Preheat the oven to the temperature given, with the rack in the middle. Only open the door if the recipe says so: the dish is ready when it is golden and the time is up.

Tips and variations

  • Add a bay leaf while it simmers.
  • Comté is a great stand-in for Gruyère.
  • Make the soup the day before and gratinate just before serving.
